In one of the most attended webinars of 2022, AHF’s November webinar, “Revamping Patient Meal Services Offerings to Increase Patient Satisfaction”, participants heard Bryan Medical Center’s Director of Nutrition & Dining Services, Mike Dixon, and Executive Chef, Nazim Khan, discuss ways they have successfully tweaked their menus over the years and what they’ve learned along the way.

After providing an overview of their hospital’s dining services demographics, Mike and Chef Nazim described some of the dishes they have experimented with recently, how they adapt them to different patient populations, and how the dishes have been received over the years. They walked through the steps they take when changing patient meal service items, like recipe development and tasting, feedback from patients and patient care staff, and evaluating plate waste. Throughout the webinar, the speakers highlighted ways in which they partner with local food vendors, how their patients have responded, and why they feel local, fresh ingredients are so important in their daily menus.
