An overview of AHF’s December webinar with JPS Health and their journey to reduce waste while increasing patient satisfaction from the 70th to the 90th percentile.

The pandemic threw healthcare systems a curveball, and JPS Health Network's Nutrition Services team was no exception. As things began to get back to “normal” again this year, the team at JPS focused on increasing their patient satisfaction, which in turn has also reduced both food waste and financial waste.

During this month’s webinar, JPS Health Network’s Neal Lavender, Executive Director of Food and Nutrition Services, Meradith Harris, Assistant Director of Clinical Nutrition and Patient Services and Russ Persinger, Executive Chef shared the steps they took to increase their patient satisfaction from the 70th percentile to the 90th percentile from FY22 to FY23. This webinar was packed with actionable insights and best practices for any healthcare or senior dining operator.  

Chef Russ provided real life tips and tricks he puts to use every day in his kitchen to not only cut down on food waste and save money, but to provide higher quality food to patients. From selecting the right container to ensure better portion control and uniformity to how to repurpose food items for multiple meals, attendees were able to come away with many new ideas and concepts for their kitchen.

The speakers also walked through how they utilize data to drive results and provided examples of how the team dissects late tray data, call center volumes and patient menu ordering processes to deliver a more enjoyable meal for their patients. They discussed the value of their menu committee to make sure goals continue to be met, as well as how they handle changes to patient menus, both when planned and when unplanned due to challenges such as supply chain issues. 

The JPS team's efforts paid off in spades. Patient satisfaction scores soared, food waste significantly decreased, and a culture of mindful resource management took root.
